El desarrollo del presente trabajo, integra la descripción del Sistema Agroindustrial (SAI) de tuna en el estado de Puebla y la problemática del desespinado. México ocupa el primer lugar a nivel mundial en superficie cultivada de tuna y participan 18 estados, sin embargo sólo en seis se concentra el 98% de la producción nacional. El estado de Puebla ocupa el tercer lugar a nivel nacional con 52,480 t., distribuidas en los municipios de Acatzingo, General Felipe Ángeles, Quecholac, Tlacotepec de Benito Juárez; la variedad dominante es la Villanueva aunque se están implementando variedades rojas por la demanda que tienen en el mercado extranjero. La época de cosecha inicia en el mes de marzo y finaliza en noviembre, esta región es la más alta en cuanto a productividad a nivel nacional y se estima alrededor de 2,000 productores de tuna en la región, de los cuales el 63.0% son ejidatarios, 24.8% pequeña propiedad, 10.4% posesionarios y el 1.8% comunal. El desespinado de la tuna se hace en máquinas desespinadoras que han sido diseñadas empíricamente en diferentes lugares. Se realizó un censo para conocer el total de máquinas desespinadoras que existen en el estado, obteniendo un total de 137. Se elaboró una clasificación en donde se eligió una muestra de 5 máquinas, por último se realizó la evaluación de estas máquinas en tres etapas, una primera etapa de gabinete para hacer una revisión de los criterios de evaluación de las máquinas, una segunda etapa de campo para obtención directa de datos durante la operación de las máquinas considerando los siguientes criterios: la observación directa y toma de datos durante la operación de las máquinas, y la tercera etapa para ordenar la información en cuadros comparativos para llegar a los análisis y conclusiones pertinentes -- |

The development of this writing integrates the description of the Agroindustrial System (also known as SAI for its Spanish initials) of prickly pear in the state of Puebla and the problematical of the filleting process. Mexico ranks first worldwide in cultivated prickly pear acreage and involves 18 states, however 98% of the national production is concentrated in only 6 states. The state of Puebla ranks third nationally with 52,480 ts distributed among the municipalities of Acatzingo, General Felipe Ángeles, Quecholac, Tlacotepec de Benito Juárez. The dominant variety is the Villanueva but red varieties are being implemented because of the demand in the foreign market. The harvest season begins in March and ends in November. This region is the highest in terms of national productivity and it is estimated about 2,000 prickly pear producers in the region. From this, 63.0% are communal lands holder, 24.8% are small holding, 10.4% are landholders and 1.8% are communal. The prickly pear filleting process is made with fillet machines that have been designed empirically in different places. A census was conducted to know the total fillet machines that exist in the state, earning a total of 137. After that, a classification was developed where a sample was selected from five machines. Finally, the evaluation of these machines was made in thee phases: the first stage of cabinet to review the evaluation criteria; a second phase was made in field for direct collection of data during the operation of the machines considering the following<br/>criteria: direct observation and data collection during the operation; in the third stage the information was ordered in comparative tables to reach the relevant conclusions, that is, technical expertise, quality assurance of the machine work, evaluation of machine performance and economic evaluation. -- |
