Los hongos setas han adquirido interés en los últimos años ya que representan una alternativa saludable para sustituir alimentos de origen animal y tienen compuestos bioactivos benéficos para la salud. El objetivo de esta investigación fue hacer una caracterización química evaluando la actividad antioxidante (AA), fenoles totales (FT), azúcares totales (AT), azúcares reductores (AR), proteína total (PT), las enzimas polifenoloxidasa (PPO), catalasa (CAT) y superóxido dismutasa (SOD) y la tasa de respiración (TR), así como, aspectos físicos que incluyen la fenología de crecimiento, pérdida de peso (PP) y color, en cuerpos fructíferos de hongo seta (Pleurotus ostreatus) en 4 etapas de madurez (1 = primordios, 2 =madurez comercial, 3 y 4 = cinco y diez días después de la madurez comercial respectivamente), almacenados a dos temperaturas (0=temperatura ambiente, 1= temperatura de refrigeración (5 °C)). La (PP) fue mayor a temperatura 0 (70-90 %), el color se mantiene más limpio a temperatura 1, la (TR) fue mayor en la etapa 1 y a temperatura 0 (615.32-242.83 mL de CO2.Kg-1.h-1). La (AA) fue mayor en la etapa 4 (164.415 VCEAC/120 min). El contenido de (FT) fue mayor en la etapa 4 a temperatura 0 (1.602 mg ac.tanico.g-1.p.f.-1). Los (AT) aumentaron en la etapa 4, al igual que los (AR) (4.784 y 19.461 mg glucosa.g-1.p.f.-1, respectivamente). La (PT) fue mayor en la etapa 1 (12.362 mg albumina.g-1.pf.-1). La actividad de (PPO) y (SOD) fue mayor en la etapa 1, mientras que de CAT en etapa 4 (51.13, 29.23 y 1042.6 UI.g-1.p.f.-1, respectivamente). |

Oyster mushrooms have attracted increased interest in recent years since they represent a healthy alternative to foods of animal origin and have bioactive compounds beneficial to health. The main aim of this research was to make a chemical characterization with the determination of antioxidant capacity (AC), total phenolic content (TP), total sugars (TS), reducing sugars (RS), total protein (TP), polyphenoloxidase (PPO), catalase (CAT), superoxide dismutase (SOD) and respiration rate (RR), as well as physical aspects including growth phenology, weight loss (WL) and color in the fruiting bodies of oyster mushroom (Pleurotus ostreatus) at four stages of maturity: (1 = primordia, 2 = commercial maturity, 3 and 4 = five and ten days after commercial maturity respectively), stored at two temperatures (0 = ambient temperature, 1 = refrigeration temperature (5 ° C) ). The (WL) was higher at temperature 0 (70-90 %), the color kept cleaner at temperature 1, the (RR) was higher in stage 1 and at temperature 0 (615.32- 242.83 mL de CO2.Kg-1.h-1). The (AC) was higher in stage 4 (164,415 BCVAC/120 min). The total phenolic content (TP) was higher in stage 4 at temperature 0 (1.602 mg tanic.ac.g-1.f.w.-1).
