La raicilla es una bebida alcohólica emblemática de la región Occidente de Jalisco que cuenta con denominación de origen, las cualidades que posee se derivan principalmente por la especie de agave utilizada, el tipo proceso para su elaboración, la región donde se produce, además de las técnicas utilizadas por los maestros raicilleros durante todo el proceso de producción que, entre otros factores, definen el carácter y las sensaciones organolépticas para cada tipo y que le dan identidad al producto. Los objetivos de esta investigación fueron: caracterizar el proceso de producción clásica, tradicional y ancestral de raicilla y su apego a la normativa vigente; identificar el perfil sensorial en raicilla mediante la implementación del Perfil Flash y análisis CATA; compuestos volátiles en raicilla por medio de un Perfil Alcohólico; e identificar atributos tangibles e intangibles y los significados de compra en consumidores de raicilla. Los diferentes tipos de procesos empleados que se lograron identificar para la obtención de las distintas categorías de raicilla se apegaron a las disposiciones descritas en la normativa oficial vigente. Con el Perfil Flash se obtuvo una diferenciación entre raicillas dónde se identificaron 5 descriptores de diferenciación, mientras que con el análisis CATA se obtuvieron 10 descriptores que diferenciaron las muestras de raicilla de Costa y Sierra. Los compuestos volátiles que pudieron identificarse fueron etanol, metanol y propanol en concentraciones dentro de los parámetros del contenido de alcoholes de acuerdo con la NOM-199-SCFI-2017. La conceptualización de la raicilla incluyó atributos tangibles e intangibles. La DAP un sobreprecio de raicilla estuvo influenciada significativamente por la diferenciación del tipo de proceso, premios o certificaciones, la información del tipo de materia prima utilizada y su procedencia. |

raicilla is an emblematic alcoholic beverage of the western region of Jalisco that has denomination of origin, the qualities it possesses are derived mainly by the species of agave used, the type of process for its elaboration, the region where it is produced, in addition to the techniques used by the raicilleros masters throughout the production process that, among other factors, they define the character and organoleptic sensations for each type and that give identity to the product. The objectives of this research were: to characterize the classic, traditional and ancestral production process of raicilla and its adherence to current regulations; identify the sensory profile in rootstock through the implementation of the Flash Profile and CATA analysis; identify volatile compounds in rootlets by means of an Alcoholic Profile; and identify tangible and intangible attributes and the meanings of purchase in consumers of raicilla. The different types of processes used that were identified to obtain the different categories of rootlet adhered to the provisions described in the current official regulations. With the Flash Profile a differentiation was obtained between rootlets where 5 descriptors of differentiation were identified, while with the CATA analysis 10 descriptors were obtained that differentiated the samples of raicilla of Costa and Sierra. The volatile compounds that could be identified were ethanol, methanol and propanol in concentrations within the parameters of alcohol content according to NOM-199-SCFI-2017. The conceptualization of the rootlet included tangible and intangible attributes.
