El mezcal ancestral es una bebida tradicional, obtenida de la destilación de jugos de agave fermentados y representativa de la cultura mexicana. Los objetivos de esta investigación fueron: caracterizar el proceso de producción de mezcal ancestral en Santa María Ixcatlán, Oaxaca y explorar el cumplimento de la normativa vigente; identificar y cuantificar los compuestos volátiles en mezcal ancestral provenientes de dos tipos de especie de agave y de dos regiones productoras; identificar los atributos sensoriales de mezcales ancestrales mediante la metodología marque todo lo que corresponda (CATA) y el Perfil Flash (PF); e identificar la estructura de los valores humanos en consumidores locales de mezcal ancestral de Ixcatlán, el tipo de ruta de influencia de los valores humanos sobre el consumo, los significados, la conceptualización asociada y la disposición a pagar (DAP) un sobreprecio. Los resultados mostraron un bajo cumplimiento de la NOM 070-SCFI-2016. Los compuestos volátiles identificados fueron etanol, metanol y propanol, cuyas concentraciones fueron significativamente diferentes de acuerdo a la especie y zona productora; todas las muestras cumplieron con la concentración permitida por la Norma Oficial. La metodología CATA permitió obtener 16 descriptores que diferenciaron las muestras de mezcal ancestral y el PF mostró una mayor diferenciación por especie que por zona de producción. Los valores motivacionales priorizados correspondieron al dominio de orden superior de Conservación. La influencia de los valores humanos en el consumo de mezcal ancestral de Ixcatlán fue directa. Las categorías de mayor comunalidad dentro del significado psicológico simbólico fueron tradición, proceso, identidad y hedonismo. La conceptualización de mezcal ancestral incluyó atributos tangibles e intangibles. La DAP un sobreprecio por mezcal ancestral ejerció influencia significativa por la calidad, sabor, destilación en olla de barro, certificaciones y el ingreso. Ancestral mezcal is a traditional beverage obtained from the distillation of fermented agave juices and it is representative of the Mexican culture. The objectives of this research were: to characterize the production process of ancestral mezcal in Santa María Ixcatlán, Oaxaca, and to explore compliance with current regulations; to identify and quantify the volatile compounds in ancestral mezcal from two types of agave species and two producing regions; identify the sensory attributes of ancestral mezcals using the Check All That Apply (CATA) and Flash Profile (FP) methodology; and identify the structure of human values in local consumers of ancestral mezcal from Ixcatlán, the type of route of influence of human values on consumption, the meanings, the associated conceptualization and the willingness to pay (WTP) a premium price. The results showed low compliance with NOM 070-SCFI-2016. The volatile compounds identified were ethanol, methanol and propanol, whose concentrations were significantly different according to the species and producing zone; all samples complied with the concentration allowed by the Official Standard. The CATA methodology allowed obtaining 16 descriptors that differentiated the ancestral mezcal samples and the FP showed greater differentiation by species than by production zone. The prioritized motivational values corresponded to the higher order domain of Conservation. The influence of human values on the consumption of ancestral mezcal from Ixcatlán was direct. The categories of greatest communality within the symbolic psychological meaning were tradition, process, identity and hedonism. The conceptualization of ancestral mezcal included tangible and intangible attributes. The WTP a premium for ancestral mezcal exerted significant influence for quality, taste, clay pot distillation, certifications and income. Finally, ancestral mezcal produced by small producers presented the highest willingness to pay. |
