El presente documento versa sobre el Proceso de Producción del Cacao en Tabasco. Principia por ubicar diacrónica y geográficamente al Theobroma , enfatizando en las causas históricas que determinaron los cambios fundamentales que ocurrieron en su producción y los factores ecológicos que ejercen mayor influencia en el desarrollo del cultivo. Posteriormente se describe la Técnica empleada en el establecimiento y manejo de los cacaotales, explicando la influencia del medio ambiente en la marcha técnica. Obtenida la cosecha, se pasa a describir el Proceso de Fermentación e Industrialización para luego analizar la forma en que el imperialismo norteamericano ha afectado al sector cacaotero tabasqueño y la transferencia del excedente económico de este sector hacia el comercial, en un principio, y hacia el industrial actualmente, quedando patente la dominancia de las Empresas Transnacionales en este sector y su contubernio con el Estado Mexicano. Hecho el análisis sincrónico y diacrónico tanto a nivel estatal como nacional e internacional se llega a la fase de síntesis en donde se trata de concretar y aprehender la problemática para dar fundamento a las conclusiones finales. --

The present document relates about the process of cocoa production in Tabasco. Starts by locating diachronous and geographycaly the Theobroma, emphasizing in the historic case that settled the fundamental changes that ocurred on its production and the ecological factors that perform greater influence in the development of cultivation. Subsequently the harvest it comes to describe the fermentation and industrialization process. Then analyze the way that the Northamerican imperialism has affected the cocoa plantation sector in Tabasco and the transference of economical excess of this sector towards the commercial, in the beginning, and actually to the industrial sector, remaining patent the dominancy of the trasnsnational enterprises in this sector and its alliance with the mexican state. Made the synchronous and diachronous analysis to the level of the State National or international, it gets to the synthesis phase where it trys to confine and conceive the problematic to give basis to the final conclusions.
