La demanda de alimentos procesados se ha incrementado enormemente con el crecimiento de la población en núcleos urbanos. Y esto se debe principalmente a un cambio completo del estilo de vida, donde las mujeres trabajan fuera de casa y no tienen tiempo para complejas preparaciones culinarias. En el estado de Hidalgo la producción de higo, se concentra en el Valle del Mezquital, donde la agricultura representa la principal forma de sustento para muchas familias, es ahí donde anualmente se cosechan alrededor de 320 ton de este fruto, lo que representa e 10.43% de la producción nacional. Debido a la estacionalidad en la producción de higo (julio - septiembre) y la perecibilidad del mismo (con vida util de dos días a temperatura ambiente); se presentan problemas de comercialización donde el precio del producto baja radicalmente,(de $30.00/k a $2.50/k), a tal grado que económicamente resulta inconveniente cosecharlo. Actualmente el estudio técnico- económico, es un requisito imprescindible para llevar a cabo con probabilidades de éxito un proyecto productivo. El presente trabajo, es la realización de un estudio técnico- económico para el establecimiento de una planta procesadora de mermelada de higo en Ixmiquilpan, Hgo. Con la finalidad de evitar el desperdicio de esta fruta, durante el lapso de sobreoferta y al mismo tiempo aprovechar la cosecha de éste fruto en la región, para crear un producto de larga vida útil(1 año) y con valor agregado. El proyecto resultó factible económicamente, ya que representa una buena alternativa de inversión, debido a que se obtuvo una TIR de 29.91% para la empresa y de 44.59% para el proyecto y ambos valores son superiores a la Tasa de Rentabilidad Mínima Aceptable (15%), que es la que el Banco podría ofrecer. Desde el punto de vista técnico, social y ambiental, también es viable. Por lo que su ejecución representa una alternativa de comercialización del higo y una buena solución al problema causado por la estacionalidad de producción de tal fruto.

The demand of processed foods has been increased enormously with the growth of the population in urban nuclei. And this must to a complete change of the life style mainly, where the women work abroad and they do not have time for complex culinaries preparations. In the state of Hidalgo the production of chumbo, is concentrated in the Valley of the Mezquital, where agriculture represents the mair sustenance form for many families, it is there where annually they are harvested around 320 ton of this fruit, which represents the 10,43% of the national production. Due to the seasonal in the production of higo (July September) and the perichable of the same one (with life utility of two daysto room temperature); problems commercialization appear where the price of the low product radically,(of $30:00/k to $2.50/k), to such degree that economically turns out inconvenient to harvest it. At the moment economic the technical study, is a requirement essential to carry out with success probabilities a productive project. The present work, is the accomplishment of economic a technical study for the establishment of a plant jam processor of chumbo in Ixmiquilpan, Hgo.With the purpose of avoiding the waste of this fruit, during the lapse of exceed supply and at the same time of taking advantage of the harvest this one fruit in the region, to create a product of long life utility (1 year) and with added value. The project was feasible economically, since it represents a good alternative of investment, because a TIR of 29,91% for the company was obtained and of 44,59% for the project and both values they are superior to the Rate of Acceptable Minimum Yield (15%), that is the one that the Bank could offer. From the technical point of view, social and environmental, also he is viable. Reason why its execution represents an alternative of commercialization of chumbo and a good solution the problem caused by the seasonal of production of such fruit.
