La producción de manzana y pera en el estado de Veracruz ha disminuido en los últimos anos, siendo que parte del sustento de las comunidades esta basada en la agricultura. La cosecha de manzana y pera, inicia en abril y termina en septiembre periodo donde se concentra la producción en el municipio de Astacinga, Veracruz. Los volúmenes que se tienen son constantes solo con la variante de que en el municipio de Orizaba se presenta una sobreoferta. Lo que hace que el precio de la materia prima baje, siendo esto el motivo por el cual los productores prefieren dejar su fruto en los árboles aunado a que si cortaran los frutos estos presentan una alta tasa de descomposición, debido a las condiciones climáticas, lo que produce que al no poder colocar el fruto en el mercado, sus ingresos no cubran todos los gastos realizados para llevar los frutos al consumidor. En la actualidad un estudio técnico - económico; permite conocer la probabilidad de realizar un proyecto productivo, esta es la razón de llevar a acabo el presente estudio, que permite a los productores tomar la decisión de procesar o no la manzana en mermelada y la pera en almibar, evitando con esto el desperdicio de fruta y aumentando su vida de anaquel. Obteniendo como resultado del estudio que se requiere una inversión total de $5'312,150 analizandose su rentabilidad en un periodo de 10 años. Los indicadores calculados presentan una TIR de 36% para el proyecto, una VAN de $6'185,077 y una RB/C de 1.3. En el análisis de sensibilidad, se aprecia que reduciendo la producción en 35% y el precio en 15%, la TIR es aceptable, dado que es superior a la Tasa de Rentabilidad Minima Aceptable(14%), lo que demuestra la flexibilidad del proyecto. Por estas razones, se puede decir que desde el punto de vista técnico, social y ambiental, es viable el proyecto, por lo que su ejecución representa una alternativa de comercialización de la manzana y la pera.

The production of apple and pear in Veracruz state has decreased since the last years, and being its production a substantial part of the economy of the communities which are based in the agricultural activity. The harvest of apple and pear, starts on April and ends in September, in this period the production has a peak in the Astacinga, Veracruz municipio. The volumes reached are constants with only a variation in the Orizaba municipio, where a overflow is seen. This makes that the price of raw materials get down, Being this a reason for the producers to keep the fruit in the trees, plus the fact that if they cut the fruits these present a high decomposition rate, because of the climate conditions which produces that at being unable to place the product in the markets, their incomes can not cover the expenses that were made to take the product to the client. Today a technical - economic study,; Allow to the analyst to know the probability of success of a productive project, that is the reason for making the present study, which allows to the producers make a decision about processing or not the apple into jam and the pear into syrup, avoiding with this activity the fruit waste and increasing its duration in shelves. The results of the study shows that a total inversion of $5'312,150 pesos, is needed, after analyze the profitability in a period of 10 years. The calculated indicators presents a TIR of 36% for the project, a Net Annual Value of $6'185,077 and a cost -benefit relationship of 1.3. In the sensibility analysis, it can be seen that reducing production in 35% and the price in 15%, the TIR is adequate, because is higher than the Minimum Acceptable Profitability Rate (14%), which demonstrates the flexibility of this project. By these reasons can be said that since the technologic, social and environmental point of view, this project is viable, and its start represent an alternative of commercialization for apple and pear.
