Dentro del contexto de la caracterización de la agroindustria se ubica este trabajo a nivel de diagnóstico tratando de lograr, en primer término evaluando el grado de desarrollo agroindustrial existente en la zona de estudio, así mismo determinando a cierto nivel, los recursos agroindustriales, de tal manera que nos sirva para determinar el potencial agroindustrial en dicha zona. El municipio de estudio fue Xicotepec de Juárez, Puebla, localizado al norte del estado. La metodología usada consistió en una revisión de literatura y trabajo de campo. La fase de revisión de literatura se conformo por el marco teórico y de referencia; y en la fase de trabajo de campo se levantó un censo a las agroindustrias ubicadas en el municipio de estudio. Los resultados obtenidos muestran que en la zona de estudio, la mayoría de la agroindustria presenta un bajo nivel de mecanización esto quiere decir que se ubicada dentro de las fases de desarrollo agroindustrial en la industria manufacturera. Es la excepción la industria del café presentando un alto nivel de mecanización y un alto desarrollo, y dentro de las fases de desarrollo agroindustrial se encuentra entre la industria manufacturera. La zona de estudio presenta potencial agroindustrial ya que por su clima hace adaptable a una gran cantidad de cultivos montañosos de alta demanda como son algunos frutales, que no se producen por falta de asesoría o conocimiento de su existencia. Las principales necesidades actuales de la empresa agroindustrial en el municipio de Xicotepec de Juárez, es la modernización tecnológica junto con la necesidad de crédito, falta de personal capacitado para mejorar procesos obsoletos en tiempos o productividad. En el beneficiado de café existe la necesidad de actualizar las formas de proceso. El principal problema del sector primario es de tipo organizacional por parte de los productores de bajos ingresos, por que aunque estos cuentan con asociaciones, no las utilizan debidamente para que les ayude a mejorar su nivel de vida.

Within the context of the characterization of agroindustry is located at the level of this work to seek diagnosis, first by assessing the level of agro-industrial development in the study area, as well as identifying a certain level, agricultural resources, such way we used to determine the agroindustrial potential in the area. municipality of study was Xicotepec de Juarez, Puebla, located north of the entity. The methodology used consisted of a revision of literature and field work. The results show that in the study area, most of the agribusiness has a low level of mechanization that means is located within the stages of agro-industrial development in manufacturing. The exception is the coffee industry by presenting a high level of mechanization and a high development, and within the stages of agroindustrial development is among the manufacturing industry. The study area presents agribusiness potential as its climate makes it adaptable to a wide range of mountain crops of high demand such as some fruit trees, which are not produced for lack of advice or knowledge of its existence. The main needs of the agro-business in the municipality of Juarez Xicotepec, is the technological modernization with the need to credit, lack of trained personnel to improve processes obsolete in time or productivity. In coffee benefited there is the need to update the forms of process. The main problem of the primary sector is organizational by low income producers. Because althoughthat although these associations are not using them properly to help them improve their standard of living.
