En los últimos años se ha observado un aumento de las Enfermedades Transmitidas por Alimentos (ETA), lo cual ha impulsado a las empresas a implementar, organizar y actualizar los programas de inocuidad alimentaria, para brindar confianza a los consumidores. La Comercializadora de Hortalizas Finas de Hidalgo “Los Altos” S.P.R. de R.I. es una empresa agroindustrial líder en la región, dedicada a la selección y empaque de productos hortícolas. Por esta razón existe un compromiso con el consumidor y se busca mejorar constantemente la calidad e inocuidad de los productos a través de la implementación de Buenas Prácticas de Manejo (BPM). El manual de BPM se elaboro tomando como referencia la Guía de Buenas Prácticas Agrícolas para Frutas y Hortalizas Frescas, del Centro de Investigación en Alimentación y Desarrollo, A.C. y con el apoyo del comité de Sanidad Vegetal del Estado de Hidalgo. Durante la implementación del Programa de las BPM se valoro al personal, la infraestructura y operaciones realizadas en la planta, para evaluar el grado de avance en la empresa. El Servicio Nacional de Sanidad, Inocuidad y Calidad Agroalimentaria (SENASICA) expidió el certificado del cumplimiento de BPM, consolidando la imagen de la empresa frente a los consumidores y aumentando la competitividad en el mercado. --

In the last years has been observed an increase of the Diseases Transmitted by Food (ETA), which has stimulated to the companies to help, helping the programs of food innocuousness, for to drink safety to the consumers. Comercializadora de Hortalizas Finas de Hidalgo “Los Altos” S.P.R. de R.I. is a leading agribusiness company leader in the region dedicated to the selection and packing of horticultural products. For this reason a commitment exists with the consumer and there is sought to improve constant the quality and innocuousness of the products across the implementation of Good Practices of Managing (BPM). BPM's manual I elaborate taking as reference the Guide of Good Agricultural Practices for Fruits and Fresh Vegetables, of the Center of Investigation in Nourishment and Development (CIAD), and with the support of the committee of Vegetable Health of Hidalgo State. During the implementation of the Program of the BPM I value to the personnel, the infrastructure and operations realized in the plant, to evaluate the degree of advance in the company. The National Service of Health, Innocuousness and Food-Processing Quality (SENASICA) sent the certificate of BPM's fulfillment, consolidating the image of the company opposite to the consumers and increasing the competitiveness on the market.
