El objetivo del presente trabajo fue la Implementación y Actualización del Manual de Buenas Prácticas de Manejo de la Comercializadora de Hortalizas Finas de Hidalgo Los Altos S.P.R. de R.I., ubicada en el municipio de Mineral de la Reforma, se analizó el proceso de empacado del tomate bola, así mismo, se implementaron los Procedimientos de Operación Estándar (POE) y los de Sanitización (POES), puesto que a pesar de que ya se contaba con la Constancia por la Aplicación del Sistema de Reducción de Riesgos de Contaminación (SRRC) la mayoría de los procedimientos no se llevaban a cabo o bien de una manera incorrecta y las actividades no se registraban en las bitácoras. Por otro lado, se actualizó el Manual de Buenas Prácticas de Manejo de acuerdo a los nuevos lineamientos que exige el Servicio Nacional de Sanidad, Inocuidad y Calidad Agroalimentaria (SENASICA) con la finalidad de obtener nuevamente la Certificación para el año 2011, algunos de los procedimientos únicamente se adaptaron a los nuevos requerimientos y otros, tuvieron que elaborarse por completo.

The aim of this study was Implementation and Updating the Manual of Good Manufacturing Practice (GMB) of the product of vegetable matter of Hidalgo "Los Altos", S.P.R. de R.I., located in the municipality of Mineral of the Reforma, process was analyzed tomato packing ball, so it implements the Standard Operating Procedures (SOP) and Sanitation Standard Operating Procedures (SOPS), even though it already had the Evidence for the Application of Risk Reduction of Pollution, most procedures were not carried out or if but in a wrong way and such activities were not recorded in the logs. On the other hand was updated the Manual of Good Manufacturing Practice (GMB) according to new guidelines that required the National Health Service, Food Safety and Food Quality with the aim of regaining the Evidence for 2011, only some of the procedures were adapted to new requirements and others had to be developed fully.
