Esta tesis describe la interrelación y el funcionamiento que existe entre los componentes del sistema agroindustrial miel en el Estado de Yucatán. Con la aplicación de la metodología propuesta por el Instituto Interamericano de Cooperación para la Agricultura y el Análisis Estratégico de Retos y Oportunidades, se pretende proponer estrategias que permitan el desarrollo del sistema mediante una mayor articulación de las cadenas productivas del mismo y una mayor rentabilidad de la industria de la miel en el Estado de Yucatán. En base los resultados, se propone el fortalecimiento de las organizaciones, la capacitación técnica y el incremento de colmenas de los apicultores. Por otro lado, el desarrollo de la industria transformadora así como la creación de una estrategia comercial para el mercado nacional e internacional permitiría la búsqueda de nuevos mercados dando como resultado el incremento del valor agregado al producto final. Por último, la creación de una empresa integradora, de las ya existentes, permitiría un mayor beneficio económico a los apicultores. --

This thesis describes the interrelationships and functions of the components of the agroindustrial system of honey in the state of Yucatán. With the application of the methodology proposed by the Inter-American lnstitute of Cooperation for Agriculture and of the Strategic Analysis of Challenges and Opportunities, strategies are proposed which would permit the development of the system through greater articulation within the system's productive chains and result in greater profitability of the honey industry in the state of Yucatán. Based on the results, it is proposed that the organizations be strengthened, that producers receive technical training, and that the number of hives be increased. In addition, the development of an industry of transformation, as well as the creation of marketing strategies for the domestic and international market, would lead to a search for new markets. This would result in an increase in aggregate value of the final product. Finally, the creation of an integrating enterprise, by joining those already existing, would allow greater economic benefits for the honey producers.
