Departamento de Ingeniería Agroindustrial, 2000 Abstract: Se estudiaron las características de calidad industrial que presenta el trigo producido en los valles agricolas de Mexicali, Baja California y San Luis Río Colorado, Sonora, respecto a los requerimientos de la industria molinera; así como su influencia en la comercialización de la producción. Las diferencias entre los niveles de calidad del trigo producido en estos valles respecto a lo demandado por su mercado, fueron significativas. No se alcanzan las condiciones minimas para fabricar harinas destinadas a la elaboración de pan blanco, solamente para otros productos que requieren harinas de menor fuerza de gluten. Los resultados indican la necesidad de mejorar las condiciones de cultivo del trigo que permitan alcanzar altos niveles de calidad para proveer a la industria molinera en México y competir contra las importaciones del cereal, debiendo poner atención a los avances en la liberación de nuevas variedades que han sido desarrolladas en el valle de Mexicali y que pretenden ofrecer estas caracteristicas.Abstract: The industrial characteristics presented by the wheat produced in the agricultural valleys of Mexicali, Baja California and San Luis Río Colorado, Sonora were studied regarding the requirements of the miller industry; as well as its influence in the marketing of the production. The differences among the quality levels of wheat produced in this valleys respect to what is demanded by its market, were significant. The minimum conditions to make flour for the elaboration of white bread were not meet. Only for other products that require flours of less gluten strength. The results suggest to improve the conditions of wheat crops that allow to reach high levels of quality to provide the miller industry of México and to contend against the imported cereal, considering on the advances in the release of new varieties that have been developed in the Mexicali valley and hope to offer this characteristics
