Departamento de Ingeniería Agroindustrial, 2008 Abstract: En el presente trabajo se emplearon diferentes enzimas comerciales Rapidase® UF, Rapidase® TF (Duke Thomson internacional), Rapidase® Adex (DSM Food Specialties), Viscozyme® (Novozymes), texamill® (Enmex) y Cellubrix® (Novozymes) para clarificar extractos polifenolicos acuosos de semilla de aguacate. Se evaluó la claridad, turbidez, fenoles totales, actividad antioxidante, azúcares reductores y filtrabilidad de los extractos después del tratamiento enzimático y se eligió el coctel enzimático Rapidase® TF ya que mostró ser mejor coctel de los analizados. Se optimizó el uso de Rapidase® TF para clarificar mediante la metodología de superficie de respuesta, las condiciones optimas encontradas son: temperatura = 30 ºC, concentración del coctel enzimático = 1.68 %, tiempo de hidrólisis = 3 h 59 min.Abstract: In the present work different commercial enzymes Rapidase® UF, Rapidase® TF (Duke Thomson internacional), Rapidase® Adex (DSM Food Specialties), Viscozyme® (Novozymes), Texamil® (Enmex) and Cellubrix® were employed to clarify water extracted polyphenolics from avocado seeds. Clarity, turbidity, total phenolics, antioxidant activity, reducing sugars and filterability of all extracts after treatment were evaluated and Rapidase® TF was selected because it showed better characteristics among the other enzymatic cocktails analyzed. The use of Rapidase® TF for the clarification was optimized by a response surface methodology, the optimal conditions found were: temperature = 30°C, enzyme concentration = 1.68 %, time of hydrolysis = 3 h 59 min.
