El cultivo de hongos representa a nivel mundial una nueva forma de aprovechar los residuos de las plantas procedentes de la agricultura mediante la utilización de cierta tecnología y procesos biológicos, creando así, un alimento rico en proteínas, además, de ser económico para las masas consumidoras en todo el mundo. El presente proyecto se realizó con el propósito de determinar la rentabilidad económica y el riesgo que representa la instalación de una planta productora de champiñón en el poblado de La Estación, en el municipio de Pénjamo. Guanajuato. Para la puesta en marcha de la planta, se requiere de una inversión inicial de $ 2,087,989 para lo cual fue propuesto un crédito bancario que cubra un 70%, y un crédito FONAES del 30% para cubrir las inversiones fijas y diferidas, debido a que los socios propuestos son campesinos que no pueden sufragar dicha inversión con recursos propios. Mientras que para el capital de trabajo se propuso cubrir el 60% con crédito bancario y para el restante 40%, se utilizarán recursos propios. Por éstas condiciones, principalmente, el proyecto resulta no factible para la región dada, en las condiciones establecidas, lo cual se resume en que los costos de operación resultan ser mayores que las utilidades por ventas, obteniendo año tras año pérdidas tanto para el proyecto como para la empresa. --

The culture of fungi represents a current of biotechnological processes, cconomically usable, able to turn the remainders of plants (lignocelulósicos) coming from agriculture, by means of the use ofa relatively cheap microbial technology, in rich human protein food (Wood and Smith, mentioned by Gea, 1997). This culture appears like an alternative to traditional agriculture (Gea, 1997). The present project was made with the purpose of determining the technical feasibility, the economic yield and the risk that the installation of a producing plant of Champiñón in the town of the Sation represents, in the municipality of Pénjamo, Guanajuato. For the beginning of the plant, it is required of an initial investment of $ 2.087.989 for which a banking credit was propOsed (70%), and credit FONAES (30%) to cover the fixed and deferred investments, whereas for the capital of work it proposed out to cover 60 % with banking credit and the rest 40%, own resources will be used. By these conditions, mainly, the project is non feasible for the given region, in the established conditions, which is transformed in which the operation costs turn out to be mayors that the utilities by sales, obtaining year after year lost as much for the project as for the company, and the money lent by the banks, also it is made more and more high.
