Plano de fachada principal3 aEste trabajo tuvo la finalidad de realizar un estudio técnico económico, para determinar la factibilidad, rentabilidad y el nivel de riesgo de la instalación de una planta pasteurizadora de jugo de naranja en Cañada Rica, Veracruz. Se desarrolló un estudio de mercado, un estudio mercadológico y de abasto de la materia prima. El diseño del proceso de producción en planta y la selección de maquinaria y equipo representaron una inversión inicial de $2,326,879.46. Considerando el diagnóstico de la organización, se acordó el establecimiento de una pequeña empresa con capacidad de 720 ton anuales.El análisis financiero con un horizonte a 10 años determinó que el establecimiento de la empresa es viable, mostrando una Tasa Intrna de Retorno (TIR) de 39.07%, un Valor Actual Neto (VAN) de $2,323,106.60 y una relación B/C de 1.12. Se hizo el análisis de sensibilidad en el cual se obtuvo que el proyecto es sensible a la disminución del precio de venta, ya que con 13% se obtuvo una TIR de 25.11%; así también es sensible al aumento de los costos, ya que con un 15% se obtuvo una TIR de 29.66%. Finalmente se concluyó que la instalación y puesta en marcha de este proyecto es técnica, económica, social y ambientalmente factible. --3 aThe present work was realized in order to make a technical and economic study to determine the viability, profit and risk level of the installation of an orange juice pasteurization plant in Cañada Rica, Veracruz. A market, a mercadologic and a commodity supplies study was developed. The plant production process design and the equipment and machinery selection represented an initial investment of $2,326,879.46. Considering the organization diagnostic, there was an agreement for establishing a small enterprise with a capacity of 720 tons per year. The financial analysis with a horizon of ten years determined that the establishment of the enterprise is viable, showing an internal rate of return (IRT) of 39.07%, a net present value (NPV) of $2,323,106.60, and a benefit/cost relationship of 1.12. With the realization of the sensibility analysis we obtained that the project is sensible to the decrease of the sell price, this, beacise with 13% an IRT of 25.11% was obtained; it is also sensible to the increment of the costs, this, because with a 15% an IRT of 29.66% was obtained.
