Muchas de las condiciones y prácticas están establecidas en los reglamentos y normas tanto nacionales como internacionales. En necesario que todos los programas prerrequisitos sean auditados regularmente y documentados de acuerdo con los Procedimientos Operativos Estandarizados y de Sanitización (POES) por escrito. La Sociedad de Productores con "B" y con futuro del Estado de Puebla SPR de R.L de C.V es una pequeña agroindustria dedicada al acopio de Blueberry (arándano azul) y su distribución como fruta en fresco, queriendo incursionar en el mercado nacional e internacional por lo que el desarrollo de los programas prerrequisito, será una herramienta indispensable para cumplir con los requerimientos que exige el mercado, y así cumplir con las expectativas deseadas por los consumidores, proporcionándoles una fruta inocua y de calidad. Es importante señalar que el Centro de Acopio es de reciente creación por lo que sus instalaciones están diseñadas con las condiciones básicas para su operación, es por lo que el desarrollo de esta tesis pretende analizar si la sociedad cuenta con la infraestructura y las prácticas sanitarias mínimas necesarias para garantizar la inocuidad de la fruta mediante un diagnostico que permita conocer las condiciones actuales y con base a esto implementar los programas necesarios. -- The elaborating of food safety requires that the HACCP system is founded in a base of prerequisite programs such as the Good Manufacturing Practices (GMP), sanitary practices and pest control, among others.
