I. F. # 108 de Tihuatlán, Veracruz; encargada del sacrificio, corte y deshuese de ganado bovino con el objetivo de apoyar a la mejora del proceso de producción y aseguramiento de la calidad e inocuidad del producto, utilizando herramientas de los sistema de control de calidad. La “Ruta de la Calidad” es un procedimiento sistemático que permite la identificación de un problema, evaluarlo de manera cuantitativa, proponer soluciones y evaluar los resultados que éste arroje. El proyecto se llamó “Cero Decomisos” debido a un suceso no cotidiano de impacto económico que ocurrió y se tomaron medidas para su prevención en un futuro, para ello, se tuvo que recopilar información de fuentes primarias: responsable de área, operadores y observaciones del proceso, así como fuentes bibliográficas. La conclusión más importante es que con la aplicación de esta metodología se logro a corto plazo a corto plazo la reducción de rechazos de embarques por descomposición de la carne empacada refrigerada al alto vacío, principal producto de la planta.
