(GESOL S.A.) La cual produce café soluble y café tostado y molido. También se resalta el proceso para obtener una certificación internacional en inocuidad alimentaria como lo es la norma global BRC versión 6.0 (British Retail Consortium), la cual está reconocida por la GFSI (Global Food Safety Iniciative). Además, este documento se pretende que sirva como una guía para implementar la norma BRC en una industria alimentaria. En cada punto del capítulo 2, primero se describen los requisitos de la norma y después la forma en que la planta solventa dichos requerimientos. Quality Management Systems have allowed companies in recent years, maintain standards that have served to compete in an increasingly globalized world. Quality Management Systems (QMS) are used to reduce costs in part of the production chain; train personnel, satisfy consumer needs, operate facilities in a safe and efficient way, by doing this, employees will be more productive and have fewer accidents. Likewise, consumers will have fewer complaints and both they and the producers will benefit mutually. However, in the food industry, safety management is added to the QMS, whose proper implementation guarantees that the products are safe and do not cause harm to the health of the consumer. In addition, with this system, companies will receive fewer complaints, and both they and consumers will benefit each other. In this work, a compilation of the way in which achieve the certification of the plant called General de Solubles S.A. (GESOL S.A.) which produces soluble coffee and roasted and ground coffee. The process to obtain an international certification in food safety is also highlighted, as is the global standard BRC version 6.0 (British Retail Consortium), which is recognized by the GFSI (Global Food Safety Initiative). In addition, this document is intended to serve as a guide to implement the BRC standard in a food industry.
