The smallest particle size was obtained by the C3 treatment with a size of 21 ?m. Finally, the treatment that best stabilized betalains after 30 days of storage was C4, because it obtained 89% degradation values of DPPH, very similar to the initial one. The results obtained indicate that the coacervate complexes prepared with a concentration of polysaccharides Q: 0.4 mg mL-1 and GA: 0.6 mg mL-1 (C4) at pH 5.3 could be used to protect betalains during storage.</controlfield>
