Las variables de estudio fueron: temperatura de proceso (40-60 °C), volumen de muestra a concentrar (150-500 mL) y tiempo de proceso (40-80 min). Se determinó el contenido de SH totales con el reactivo Ellman® y el contenido de S-S mediante reacción con p-cloromercuribenzoato-ditiozono. La temperatura de proceso no mostró una tendencia clara sobre el contenido de SH; a medida que el tiempo se incrementó el contenido de SH decayó; un volumen de muestra mayor se vio menos afectado por el proceso de concentración. Las muestras de 150 mL con un tiempo de proceso de 80 min presentaron la máxima disminución de SH con una caída del 74 % con respecto a la leche cruda. La metodología para determinación de S-S implementada no resultó útil para éste estudio porque presentó un alto error experimental. The main objective was to measure the content of sulfhydryl and disulfide groups in milk after its concentration at low temperature and vacuum pressure. The design variables were: process temperature (40-60 °C), sample volume to concentrate (150-500 mL) and processing time (40-80 min). The total SH content was determined with Ellman's reagent ® and the content of S-S by reaction with p-chloromercuribenzoate-dithizone. The process temperature did not show a clear trend over the SH content; as time increased, SH content declined, and a larger sample volume was less affected by the concentration process. Samples of 150 mL with a processing time of 80 min showed the maximum decrease of SH with a fall of 74 % compared to raw milk.
