  <abstract>A pesar de que en México se tiene una cultura etnomicológica muy importante, no se ha explorado profundamente la riqueza fúngica del país, específicamente para la región norte de Puebla sólo se han realizado exploraciones etnomicológicas. Este estudio pretende actualizar y profundizar sobre los probables beneficios del consumo de hongos silvestres comestibles en la región de la Sierra Norte de Puebla mediante la evaluación de su potencial nutracéutico. Durante 2021 y 2022 se exploraron los mercados tradicionales de Zaragoza y Zacapoaxtla, Puebla para realizar un estudio etnomicológico sobre su consumo. De los hongos colectados se evaluó las concentraciones de 14 elementos (Mn, Fe, Cu, Zn, V, Cr, Ni, Se, Sr, Ag, Hg, As, Pb y Cd) y su posible riesgo a la salud, además de evaluar el potencial nutracéutico, aporte calórico y contenido de β-glucanos. Se identificaron 19 especies y se registraron seis formas de consumo; se seleccionaron 12 especies de trabajo: Amanita jacksonii, Clavulina coralloides, Helvella lacunosa, Hypomyces lactifluorum, Imperator torosus, Infundibulicybe squamulosa, Lactarius indigo, Lactifluus gerardii, Pholiota terrestris, Ramaria stricta, Russula brevipes y Tricholoma equestre. Se observaron concentraciones que exceden límites de seguridad en siete elementos (Fe, Cu, Cr, Ag, Hg, As y Cd). Los compuestos fenólicos totales oscilaron entre 0.69 y 3.52 mg EAG 𝐠𝐛𝐬−𝟏, los valores de capacidad antioxidante se encontraron en el intervalo de 37.47 a 394.85 μmol ET 𝐠𝐛𝐬−𝟏 por ensayo ABTS, mientras que por ensayo FRAP los valores variaron de 0.58 a 41.13 μmol ET 𝐠𝐛𝐬−𝟏. El contenido energético osciló entre 3.82 y 4.44 kcal 𝐠𝐛𝐬−𝟏. Los β-glucanos se encontraron entre 9.43 y 24.09 % (m m-1). Los resultados obtenidos aportan nueva información respecto a 10 especies de hongos silvestres comestibles que no habían sido estudiadas previamente en el país. --</abstract>
  <abstract>Despite Mexico’s very important ethnomycological culture, the country’s fungal richness has not been deeply explored, specifically for the northern region of Puebla just has made ethnomycological explorations. This study pretends to actualize and deepen about probable benefits of wild edible mushroom consumption in the Sierra Norte in Puebla region by means of the evaluation of their nutraceutical potential. In 2021 and 2022 the traditional markets of Zaragoza and Zacapoaxtla, Puebla were explored to make an ethnomycological study about their consumption. For the collected mushrooms the concentrations of 14 elements (Mn, Fe, Cu, Zn, V, Cr, Ni, Se, Sr, Ag, Hg, As, Pb and Cd) and their possible health risk were evaluated, besides of evaluating their nutraceutical potential, caloric supply, and β-glucans content. 19 species were identified, and six consumption forms were registered, it was selected 12 work species: Amanita jacksonii, Clavulina coralloides, Helvella lacunosa, Hypomyces lactifluorum, Imperator torosus, Infundibulicybe squamulosa, Lactarius indigo, Lactifluus gerardii, Pholiota terrestris, Ramaria stricta, Russula brevipes and Tricholoma equestre. Concentrations that exceed security limits were observed in seven elements (Fe, Cu, Cr, Ag, Hg, As y Cd). The total phenolic compounds oscillated between 0.69 and 3.52 mg EAG 𝐠𝐛𝐬−𝟏, the antioxidant capacity values were found in the interval from 37.47 to 394.85 μmol ET 𝐠𝐛𝐬−𝟏 by ABTS essay, while by FRAP essay the values variated from 0.58 to 41.13 μmol ET 𝐠𝐛𝐬−𝟏.
