A lo largo de la historia de la humanidad se han desarrollado procesos que permiten conservar los alimentos durante un tiempo prolongado. El ahumado es una de las técnicas más antiguas de conservación de alimentos, donde se obtiene un producto con sabor, olor y color aceptable para el consumidor. (JUVASA, 2010) Una de las actividades más importantes en México es la agroindustria, la cual es la actividad económica que comprende la producción, acondicionamiento, industrialización y comercialización de productos agropecuarios, forestales y otros recursos naturales (FIRCO, 2017). El presente estudio de caso tuvo por objetivo analizar la rentabilidad de la puesta en marcha de un proyecto agroindustrial para el ahumado de carne de cerdo en el municipio de Tehuacán, estado de Puebla, a través de los indicadores clásicos de rentabilidad de la teoría de la formulación y evaluación de proyectos, a fin de determinar su viabilidad técnica y financiera. Para lograr los objetivos de la investigación, se realizó una revisión de literatura de fuentes oficiales de información para la parte del estudio de mercado elaborado dentro del cuerpo del proyecto, e investigación de campo con los productores, con la finalidad de poder conocer y sistematizar los principales costos dentro del proceso de producción de la carne ahumada. Se realizó un estudio de mercado para conocer la demanda del producto y los mercados potenciales del mismo. Se llevaron a cabo entrevistas con los productores involucrados con la finalidad de conocer los costos de producción y las principales actividades en el ahumado de carne, con esta información se elaboró una corrida financiera la cual permitió evaluar la rentabilidad del proyecto. El cual resulto rentable y viable, se considera rentable por presentar los siguientes indicadores x positivos: arrojó un VAN de $209,938.92, una Tasa Interna de Retorno de 23%, una Relación Beneficio-Costo de 1.02 y un punto de equilibrio del 69%.

Throughout the history of mankind, processes that allow food to be preserved for a long time have been developed. Smoked is one of the oldest food preservation technique, in which a desirable taste, smell and color for the consumer is obtained. (JUVASA, 2010) One of the most important economic activities in Mexico is the agroindustry, which is the economic activity that includes the production, conditioning, industrialization and distribution of agricultural products, forestry and other natural resources (FIRCO, 2017). The purpose of this research was to analyze the profitability of the implementation of an agro industrial project for the smoked pork in the municipality of Tehuacán, state of Puebla, through the classic profitability indicators of the formulation theory and project evaluation, in order to determine its technical and financial feasibility. To achieve the objectives of the research, a literature review from official sources of information was carried out, the market study was elaborated within the body of the project, and field research with the producers, in order to be able to know and systematize the main costs within the production process of smoked meat. A market study was conducted to know the demand of the product and its potential markets. Interviews were conducted with the producers involved in order to know the production costs and the main activities in the smoked meat, with this information a financial run was prepared which allowed to evaluate the profitability of the project. Which resulted profitable and viable, it is considered profitable for presenting the following positive indicators: it showed a NPV of $ 209,938.92, an Internal Rate of Return of 23% and a Benefit-Cost Ratio of 1.02 combined with an equilibrium point of 69%.
