| 001 | IA_Ante la exigencia de la industria moderna de leche de mejor calidad, se puede concluir que, los ganaderos de los sistemas familiar y de doble propósito, se verán cada vez más presionados para mejorar la calidad de su producto. Sin embargo, ya que la calidad de la leche es una construcción social, concretada en las formas de producción, es necesario introducir innovaciones, pero también cambiar la misma cultura productiva, lo cual representará un reto para los diversos agentes involucrados en el sector lechero. Based on a documental and field study, an official Mexican Standard framework was investigated, mainly on raw milk, in Mexico. The approach considered three basic systems of Mexican milk production: an intensive production system, a family-labor system and a double purpose system. It was found that the standard framework began consolidating in the second mid of the 20 century; however, it is from 80´s when consistent advances are done, issuing various fundamental documents on processed milk and its derivatives. This tendency is noted with the issue of various standards till the expected NMX-F-700 came for the raw milk. This standard, even not being of mandatory character, came to revolutionize the regulatory field in México for this product and to a certain extent; it constitutes one of the great milestones in the process of standards innovation which is at present in Mexico. It is a standard expected by the greatest involved sectors in the milk-product-system. It has importance because of the effects it can generate: lead to the improvement of quality, milk classification with base on its quality, and a beginning to optimize a fair payment by industry. However, as a lax standard, since by the counting disposition of the mesophilic bacteria count and somatic cell count can be obtained up to 144 milk categories, this would not allow the effect to lead the improvement of the quality of production systems under a greatest sanitary problems (family-labor system and double purpose system). Under the light of this standard, it can be said that only half of the produced milk in Mexico will be classified ashigh-sanitary quality milk. Before the demanding of the modern dairy industry for high-quality milk it can be concluded that the dairy producers of the family and double purpose systems will be increasingly underpressure to improve the quality of their products. However, since quality of milk is a socialconstruction, concreted in the production ways, it is necessary to introduce technicalinnovations, as well as change the production culture which will represent a challenge for thevarious agents involved inthe milk sector. | ||
