It was show that these supermarkets do not comply with the standards of relative temperature and humidity needed to adequately handle the storage of vegetables. As a result, the products are affected causing negative attributes such as texture degradation, discoloration, dehydration, darkening of tissues, heterogeneous ripeness, disease susceptibility, bruising, among others.
