El consumo de fibra soluble tiene efectos beneficos en la salud, regulando los niveles de azucar, removiendo toxinas y metales pesados del cuerpo. El objetivo de este trabajo fue la extraccion y cuantificacion de fibras solubles (hemicelulosas debilmente unidas y pectina) del fruto de Bonete (Jacaratia mexicana), utilizando las porciones de cascara y pulpa. El Bonete es un arbol perteneciente a la familia caricacae, que produce una baya carnosa, de color verde palido. Para la extraccion de pectinas se utilizo una solucion de oxalato de amonio (0.5 g /100 ml mL), en tanto que para la fraccion de hemicelulosas debilmente unidas se utilizo hidroxido de potasio (0.5 g /100 ml mL). Se evaluaron los rendimientos a diferente grado de madurez (11 y 14¢XBx) de los frutos, asi mismo se caracterizo a las fibras solubles considerando los porcentajes de humedad, cenizas, proteinas y el grado de metoxilacion. Se encontraron rendimientos del 6.47 "b 0.2 a 7.85 "b 0.2 en pectinas y 3.68 "b 0.1 a 5.05 "b 0.4 en hemicelulosas debilmente unidas, en cuanto al grado de metoxilacion todas las fracciones de fibra fueron de alto metoxilo. --

The soluble fiber intake has beneficial effects on health, regulating the sugar levels, removing toxins and heavy metals from the body. The objective of this work was the extraction and quantification of soluble fiber (pectin and hemicelluloses weakly bound) of the Bonete fruit (Jacaratia mexicana), fractions of peel and pulp were used. The Bonete is a tree belonging to the Caricaceae family, which produces a fleshy berry, pale green. To extraction of pectins a disolution of ammonium oxalate (0.5 g / 100 mL), and a potassium hydroxide disolution (0.5 g / 100 mL) for the fraction of hemicelluloses weakly bound was used. Also the maturity (11 and 14¢XBx) of the fruits was evaluated, in addition were characterized the soluble fibers in based on the percentage of moisture, ash, protein and the degree of methoxylation. Yields 6.47 "b 0.2 to 7.85 "b 0.2 were found in pectins and 3.68 "b 0.1 to 5.05 "b 0.4 in weakly bound hemicelluloses, the degree of methoxylation of all fiber fractions were high methoxyl.
