El objetivo de esta investigacion fue desarrollar y caracterizar peliculas de pectina de tejocote (PT55) o pectina comercial (PC) con cera de candelilla, evaluando propiedades viscoelasticas, mecanicas, de barrera, y su uso como recubrimiento para el hongo seta. El tipo y concentracion de pectina afecto significativamente (P.0.05) las propiedades evaluadas. El recubrimiento con 2% de PT55 y 0.1 CC produjo baja perdida de peso (1.2%), mayor firmeza de tejido (3N), mayor luminosidad (L*78), menor produccion de metabolitos anaerobios (6 Mmol/ml), y baja concentracion de CO2 en el envase (2%).Los recubrimientos con PT55 en comparacion con PC fueron efectivos, prolongando la vida util del hongo por 20 días. --Abstract: The fungus Pleurotus ostreatus is a very nutritious food with great marketing potential however it is limited by being a highly perishable product and little information of the other technologies that increase its lifetime. The objective of this research was to develop and characterize films of tejocote pectin (PT55) or commercial pectin (PC) with candelilla wax, which were evaluated by viscoelastic, mechanical and barrier properties, and their use as a coating for the mushroom. The type and concentration of pectin was significant (P=0.05) in evaluated properties. The coating with 2 % PT55 and 0.1 CC wax was the one which produced low weight loss (1.2 %) firmer tissue (3N), more luminosity (L 78), decreased production of anaerobic metabolites (6 mmol/ml), and low concentration of CO2 in the package (2%). The PT55 coatings compared with the PC control were effective to preserve fungus extending useful lifetime for 20 days.
