La vinicultura es una actividad que consiste en el proceso agroindustrial de la obtención del vino a partir de uva vinífera de la que hay una amplia gama de variedades. Debido al crecimiento que ha adquirido esta actividad en Guanajuato; esta investigación busca caracterizar la actividad vinícola mediante el estudio del sistema agroindustrial vid-vino en la región norte de Guanajuato con el fin de lograr la promoción de su reconocimiento como productor de vino. El desarrollo de este trabajo consistió en la recopilación de información sistematizada de datos en páginas relacionadas con el desarrollo de uva y vino tanto en México y principalmente en Guanajuato, así como la situación global de esta agroindustria.
La metodología consistió en entrevistas semi estructuradas dirigidas a actores clave acerca de la situación en que se encuentran las bodegas vinícolas de la región establecida, como empresas vinícolas, instituciones como la Asociación de Vitivinicultores Uva y Vino de Guanajuato A. C y personal del Museo del Vino en Dolores Hidalgo.
Finalmente los resultados que se obtuvieron reflejaron que esta agroindustria tiene grandes oportunidades de crecimiento y desarrollo, así como la posibilidad de escalar un nivel dentro del ranking nacional de estados vinícolas, siempre y cuando se mejoren algunos aspectos la capacitación del empleo de paquetes tecnológicos para el manejo de la vid en campo, capacitación en la elaboración de vinos multi varietales, la formalización legal de algunas empresas y mejor organización en la Asociación de Vitivinicultores de Guanajuato.
Winemaking is an agroindustrial process of obtaining wine from wine grapes of which there is a wide range of varieties. Due to the growth that this activity has acquired in Guanajuato, this research seeks to characterize the winemaking activity through the study of the agroindustrial wine-vine system in the northern region of Guanajuato in order to achieve the promotion of its recognition as a wine producer. The development of this work consisted in the compilation of systematized information of data in pages related to the development of grape and wine both in Mexico and mainly in Guanajuato, as well as the global situation of this agroindustry.
The methodology consisted of semi-structured interviews aimed at key players about the situation of wineries in the established region, such as wineries, institutions such as the Association of Winemakers of the State of Guanajuato (AVG) and staff of the Wine Museum in Dolores Hidalgo.
Finally, the results obtained showed that this agroindustry has great opportunities for growth and development, as well as the possibility of climbing a level within the national ranking of wine-growing states, provided that some aspects are improved, such as training in the use of technological packages for the management of vines in the field, training in the production of multi-varietal wines, legal formalization of some companies and better organization in the Association of Winemakers of Guanajuato.
