Dissertation note: Informe de Estancia Preprofesional (Ingeniero Agroindustrial) -- Departamento de Ingeniería Agroindustrial, 2025 Licenciatura Abstract: El presente trabajo se centró en la verificación, actualización y seguimiento del sistema de gestión de inocuidad de la empresa Productos Rivera de Escuinapa S.A de C.V. con la finalidad de asegurar el cumplimiento de los requisitos estipulados por Primus GFS y Oregon Tilth (OTCO), y poder conseguir su recertificación anual. Para ello se hizo uso de bitácoras de monitoreo, actualización de documentación y auditorías internas, con ayuda de los formatos de verificación del sistema PRIMUS GFS y los parámetros orgánicos establecidos por la certificadora Oregon Tilth. La organización objeto de este estudio, está ubicada en el municipio de Escuinapa Sinaloa. Los resultados muestran una mejora significativa en las prácticas y procesos de calidad e inocuidad de la empresa, logrando un nivel de cumplimiento del 99.3 % tras la última auditoría interna realizada. Del mismo modo, se obtuvieron mejoras significativas en el control de registros y documentación al igual que con el personal cualificado. --Abstract: This work focused on the verification, updating and monitoring of the safety management system of the company Productos Rivera de Escuinapa S.A de C.V. to ensure compliance with the requirements stipulated by Primus GFS and Oregon Tilth, and to be able to achieve annual recertification. For them, monitoring logs, documentation updates and internal audits were used, with the help of the verification formats of the PRIMUS GFS system and the organic parameters established by Oregon Tilth (OTCO). The organization object of this study is located in the municipality of Escuinapa Sinaloa. The results show a significant improvement in the company's quality and safety practices and processes, achieving a compliance level of 99.3 % after the last internal audit carried out. Likewise, significant improvements were obtained in the control of records and documentation as well as with qualified personnel.
