La cunicultura nacional tiene muchos retos por delante para que esta crezca con forme al potencial que tiene en forma de ventajas de producción y nutricionales sobre otras carnes (Res, cerdo, pollo) que son altamente consumidas en México, por lo que es de vital importancia la implementación de tecnologías y procesos de transformación que contribuyan al crecimiento de esta actividad económica.
En este contexto, la falta de información, publicidad, estudios, políticas públicas, entre otros factores ha provocado que el sector tenga un crecimiento mínimo en comparación con otras entidades a nivel mundial. Es por esto que la investigación y la creación de proyectos productivos contribuirá a tener más herramientas para el desarrollo del sector.
El objetivo de este proyecto fue determinar la viabilidad técnica y económica para la implementación de un empaque al alto vacío de carne de conejo en el Ejido de San Mateo Coapexco, Villa Guerrero, México.
Con la investigación realizada permitió determinar que el proyecto es viable técnica y económicamente, además que se logró determinar un plan de distribución y comercialización apto y acorde a las condiciones generales de proyecto.

This is why research and the creation of productive projects will contribute to having more tools for the development of the sector.
The objective of this project was to determine the technical and economic viability for the implementation of high vacuum packaging of rabbit meat in the Ejido de San Mateo Coapexco, Villa Guerrero, Mexico.
The research carried out made it possible to determine that the project is technically and economically viable, and it was also possible to determine a suitable distribution and marketing plan in accordance with the general conditions of the project.
